Q: default reminder time,
A: It has been in our developing plan to offer an option in Settings for you can set it.
Q: default priority
A: If all tasks has the same priority,why do you need to set them? Now new tasks has no priority. If you need to mark a task which you need care, you can pick a different priority.
Q: default time / all-day for new tasks.
A: New tasks are created to be all-day tasks. Do you mean that you want all tasks are created to be not all day as your tasks always have specific time?

First of all thank you for a great product. Most of following are observed in Mac but applies to all versions.
One thing that seriously lacks from the app (all versions) is missing setting for default reminder time, default priority and default time / all-day for new tasks.
Most important here is default reminder, it would be really important to have all new tasks have reminder of on time, 30 minutes before time or any other pickable option from settings. Google calendar allows you this and so does a lot of todo products. I simply pick 30 minutes as default and that means that in hurry of creating a new task I do not have to fiddle with setting a reminder. Since this is a setting, like in Google it could be an option to not enable this.
Default priority setting will give an option to chose low priority for any new tasks. This way when I add new tasks I know not everything is getting normal priority. Only the tasks I care about will need me to pick a different priority.
Default time for new tasks (or option to have all-day tasks) is a nice feature too. Currently all new tasks are created all day tasks. Usually I end up changing more than 90% of these to a specific time. A lot of these are usually set to my office start time so that I know day's agenda.
Looking forward to keeping doit as my pro choice of GTD app.

Defaults can be a good idea for many of the tasks' parameters. They can serve two kinds of purposes:
a) to save time when entering tasks
b) to prevent serious mistakes if you forget to set a value
As for Priority, I would prefer, if possible, to have Medium as the default. This is because I use Priority as a key to how often I need to routinely review the tasks on my Next, Waiting (and Someday) lists. The normal case (Medium) is that I will routinely review all Next and Waiting once per day (and weekly for Someday). For those tasks that I am really sure that I do not need to review this often on a routine basis, I change the Priority to Low, but I only make this change after I am really sure that I do not need to inspect the task often (i.e. I make sure I have the task sufficiently tagged etc to be able to find it by filtering etc if a situation comes up where the task would be suitable).
I would not want to accidentally "hide" something in Low just because I had forgotten to enter a priority value. Without a Medium default it can happen sometimes that I forget to enter a value, so there is always a risk that I will not discover the task again until it is too late. I do my best to remember, but a default would feel safer. And a default would save task entry time, too, because I often decide on Low or High only at a later review, when I know for sure - I usually start tasks as Medium, unless I am very, very sure. -

I would probably set the default to be "low" which means that if any task needs a different priority I would take the time to edit it at creation. I can imagine other people using it in different way. However a setting for a default value would certainly help.

Yes please, I want a setting where I can pick a default time or "all-day" for new tasks. That would reduce number of clicks needed per a new task added.
