Hello,
Each device on which Doit.im has its own distinctive characteristics which are made the most of when we design the app.
Here comes our answers to your questions:
iPad app:
Q1:- I can't find a way to delete a context
- I can't change the name of a context
A: Now, you cannot edit a context but can delete a context. Tap on “Contexts” in the left-side menu and the “Contexts” page appears, in which long press a context and you can delete it.
Q2:- when I give a task a tag I have to klick "done" to close the small window. When I assign a project to the task the box will disappear as soon as I choose. That is quicker and more convenient.
A: Because in Doit.im, you can add up to 5 tags to a single task, while you can add one project only to a task. When you check on a tag, the app are not sure if you want to select more tags.
Q3: - I miss the ability to quickly erase a task by swiping and then click, instead of having to click the task to open it and then erase it.
A: Swiping to delete a task is not supported now. We will consider it in the future. And now, you can long press a task on the list to delete it.
iPhone app:
Q1: - I can't change a project from active to inactive and vice versa
A: Long press a project on the list of projects and you can activate or deactivate it. http://faq.doit.im/iphone.html#17
Q2: - I can't edit or delete goals
A: Long press a goal on the list of goals and you can choose to either edit or delete it.
Desktop:
Q1: - All projects, contexts, goals etc are open in a long list when I log in, each time. I want only the headings and then I can open them if I like. I want to be able to choose in the settings how much should be shown when I log in.
A: What is the desktop app you are using, Mac or Windows? Do you mean that the projects, contexts and goals are all expanded in the left-side menu each time you log into the app?
All platforms:
Q1: - Sort tasks as well as subtasks manually by drag and drop ( I read you are working on it, great! It will be a huge improvement.)
A: It will be supported soon. Yes, we are now making a design for it. Please be patient.

When using your great app I have discovered several things that work differently on different platforms, which makes it more difficult to use and remember where what can be done. Here is a list of things that I think need to change or improve in order for the apps to be even better. For some of the issues it might be that I have just not found out how to do it, in that case I hope you can help me out.
iPad app:

Thank you very much for your answers. It seems I have missed a way to use the apps. :)
I use a Mac and yes, I mean that projects, goals etc are expanded on left side, each time I log in.
It sounds great that sorting is in the works. I am looking forward to that.

Do you refer to the latest version for Mac 1.6.18? http://enblog.doit.im/post/58045781820/doit-im-for-mac-1-6-18-release-notes
And even if you collapse PROJECTS or CONTEXTS or GOALS before you log out, they will still be expanded on your next login?
Could you please try to describe the steps you did in detail?

Sorry for giving you the wrong information. I used to use the Mac-version and there are no problems there. The problems I am experiencing are with the version for the web. Even if I collapse them before logout they will be expanded when I log in.

And here, you said, "Even if I collapse them before logout they will be expanded when I log in", do you refer to the projects/contexts/goals on the left-side menu or those that appear on the right when you click PROJECTS/CONTEXTS/GOALS?
Now, the collapsed/expanded status will be remembered on the left-side menu, but not on the right list.
