Is there any way that you could add the ability to color code the names of the projects within the projects list?

I could see to goog use cases for this...

Just like you color code action items for priority, color coding of projects could help you visually identify which projects have a higher priority than others.

The other case would be to classify the type of tasks you have visually with color. For example, blue projects are for work, red projects are personal, purple projects are for volunteer, etc.
