You can drag a project and drop it to a goal.
1. Click on PROJECTS on the left side menu, and a list of projects will be showed on the right.
2. Then move your mouse to the front of a project and when the mouse turns a cross-shaped icon, press the right mouse button and drag it to a goal on the left side menu.
As for your suggestion, "It would be great if we can set a project's goal by clicking on its settings menu where you can Edit and Delete. It would be even better if we can set goals with a Smart Add shortcut", we will seriously consider it.

Easier way to put Project into Goal
Sometimes it's difficult to put a project in a goal. This happens when the project is set to "Next". There is no way to drag the project onto a goal. A workaround is to temporary set the project to "Someday" and then right click on it in the Someday tab and set the goal.
It would be great if we can set a project's goal by clicking on its settings menu where you can Edit and Delete. It would be even better if we can set goals with a Smart Add shortcut.
