I don't know if this feature is in other versions, I'm using the Windows version 4.1.17
So, I started using the app, and as per GTD methodology did a brain dump into my inbox. The next day the 'start day plan' automatically came up - but its empty! Its empty because I don't have anything in my 'Today' or 'Next' categories?
I believe, that as per GTD methodology, you're supposed to dump tasks into your inbox, and then 'process' your inbox by every day by moving your tasks into the 'Today', or 'Next', Etc. categories. I believe this is what planning your day is all about.
How can yo do this if your tasks are already categorized like your 'start day plan' feature wants?
Am I missing something here?

I do not use the planning feature at all. I see no need for it. But as far as I have seen you can add items from your Next list. The "plan" comes prepopulated with any actions you have "scheduled" for today (either GTD calendar actions or GTD tickler actions), and you can add Next actions to it. You may also want to remove some of the tickler actions, which usually belong either in Next or in Waiting and which need not necessarily be done today, but became possible to start considering today.
