Love the new GUI but I can't seem to figure out how to delete a subtask within a task. There used to be a delete button on the right when you clicked on subtask but that is gone now. How do you delete subtasks?

Do you mean that you need a icon to delete all the subtasks at the same time? Now you need delete it one by one.

Individually, right clicking a subtask won't delete it, it just deletes some of the text. If I delete all of the text for the subtask, clicking off of it the text comes back.

First you right-click the task. A "menu" will then appear with only one choice in it, called "Delete". Then you left-click "Delete".
For some reason, to bring up the little "Delete menu" I sometimes need to try clicking in different locations on the task line - a bit further to the right or to the left.
(This applies to the web interface) -

It's working correctly today; I get the appropriate menu to delete the subtask. But I'm on a PC rather than my Mac. Previously I was getting a completely different menu when right-clicking.

And this morning I'm getting the correct "delete" button on my Mac when right-clicking a subtask.
I've got to say, you guys are doing a fantastic job with DoIt. You guys are moving DoIt beyond the other GTD systems by leaps and bounds. -
