Sorry that it will not automatically set it to "Deferred" if you change the start time in Today viewing page. It will set it to "Deferred" if you change the start time in daily review.
We will try our best to improve this feature.

When the "Start Date" is manually changed in the Focus "Today", the task is left in "Daily Task Review" as "Uncompleted" (and not automatically set to "Deferred").
