I used to wonder that, too. Now I have gotten used to it, but I agree it is an unnecessary limitation that most apps have.
A rare few apps have it, though. I know Wrike does (extremely expensive), and maybe Producteev still does (It used too have it even in the free version).

In my opinion, this is not a top priority - there are so many other improvements that are much more vitally necessary, but since you ask I can give you a simple example: (but I am surprised that you are even asking):
Let's say you are preparing for a bicycle competition, and among many other things you need to buy a screwdriver for adjusting something on the bicycle. And let's say you also need to renovate your veranda and as a part of that you need to buy a screwdriver for fastening a few planks or something. Same screwdriver; needed for different purposes. This is quite common.
When you REVIEW your projects (in the GTD sense, i.e. in the "planning" sense, i.e. BEFORE you do the tasks) it us useful to see for each project that the screwdriver is needed. But you still want to see it as ONE task when it gets on the Today list.
