I really don't know.
On the times when the address has changed, I've only noticed it after a while and not immediately.
I mostly use the Web app.

I believe I've identified what is causing the issue.
Sometimes I get a dialog box that says "Please go to [my email address] to confirm your registration email address so that email reminder can work". I will attach a screen grab in private comment.
I have been getting this message for years, but whenever I press "Resend" it always fails to send me a registration email. It's basically a useless message that I ignore.
I usually clear this dialog box by pressing "Cancel", but sometimes I press "Resend".
I just tested pressing "Resend". Once again, I received no registration email. However, when I checked my Doit inbox email address I saw that it had been changed again.
So pressing "Resend" must be what changes the Inbox email address. -
