I understand that within a project, a task with subtasks can be like a mini project itself would not be necessary to create a new project, but if it would be necessary to have more information on the subtask as due date or notes .

perhaps due date is not as necessary in a subtask, because after all you could put expiration date on the main task, but the notes, if that would be useful in the subtasks to remember details of the subtasks and not have to go check the project notes

consider the following example:

Sub task: header layout - Vencimento date: 06/05/2103
Sub task: body layout - Expiration: 07/06/2013
Sub task: foot layout - due date: 11/06/013

Hello,

In your case, you may convert the task with subtasks to a project. There is no need to create a new project and you can directly convert it to a project. When a task gets converted to a project, subtasks will be converted to tasks under the project. Then, you can add duedate, notes and comments to them.
