Q1: Being able to link back to the original email would be incredibly helpful. I find myself having to search for the original email in Outlook 2011 or Mac Mail in order to respond to the email after the task has been completed.

Hi,
I'd be curious to see this working for Outlook 2011 as Outlook for Mac does not support custom url schemes out of the box to link back to an Outlook message. I've been working on this issue for another well known Mac Task Manager and have published an Applescript solution to this, which however, has its limits, especially when used with IMAP accounts. There's a long thread on this on their forum. Not sure I can post the link here, but if you do an Google search on "Adding tasks from within Outlook 2011 via Applescript - an approach" you should find it. Doesn't solve your/our problem but might be interesting to read for one or the other.
Apple mail would be easy, unfortunately we don't have Applescript support for Doit.im for Mac and don't have an API so creating new tasks from the "outside" is difficult. For now, I solve this with an Applescript that forwards the selected email to the doit.im email address (adding link back to the original message at the same time to the message body).
