In principle, the date you see is not a "created date"; it is a "scheduled date", but it boils down to the same thing in the case where you create a new task on the Today list. Doit considers it as having been "scheduled" for that day, and that you are late. Exactly the same thing will happen if you had set up a GTD Tickler (using Scheduled) for a particular day and did not deal with the task immediately on the first day it became possible to get it done.
The way Doit deals with dates and the Today list is not ideal, I agree. First of all, I fundamentally disagree with Doit's notion that starring a task means it "must" be done today and that it is removed from where it actually belongs; Today is not a "Box": http://help.doit.im/topics/2015
As for creation dates, I personally would like to have a true creation date (a "moved to Box" date) for all tasks in all views, primarily for review purposes (seeing how long I have been waiting/delaying etc), the main exception being the "star date" (moved in and out of Today), which, in my opinion, is quite irrelevant: http://help.doit.im/topics/2056

Hi there,
When I look at my Today list in the web version of doit, it shows a "Created" date next to each task.
This is irrelevant - what is important is that the task needs to be completed today, not when I entered it into the application - and, as it appears in red - very distracting. How can I delete it? Or stop it from displaying?

I would like to show my support for the post above. Especially the option to show when a project was moved to the "waiting for" list, so that I can track how long i've been waiting for the items on the list to be completed by others.

Hi,
In your case,we need to record the task operation time on all version. We will look into this issue. Now you can add a comment to the task when you put it to Waiting.
